Red Bell Peppers-A Super Food

Drum roll please for our first Veggie of the Week...

Okay, so, who wouldn't want to eat something that is a cancer fighting, cold shielding, eye enhancing, delicious super food? Sign me up! I am happy to introduce the amazing Red Bell Pepper who fulfills all these requirements and more. It is in its peak season as we speak and now is the time to load up! They are not only delicious and very versatile, but they are filled with healthy stuff.

Red bell peppers contain the antioxidant lycopene which is thought to prevent against cancer. They are also loaded with carotene for eye health. They have three times the amount of Vitamin C as an orange. They truly live up to their super food name in such a beautiful little package.



These guys are great for you and they taste amazing. You can eat them plain or added to many recipes. I love eating them stuffed with yumminess. Here is a great recipe for some healthy stuffed peppers. Be sure to use the red ones though, since they are the veggie of the week, and much healthier and tastier then green ones.
